225°F vs 275°F for Pork Butt: Which One Actually Wins?

The debate has been going on for years. Ask ten pitmasters and you’ll get ten opinions. Low and slow at 225°F, or crank it to 275°F and get dinner on the table sooner?

Here’s the straight answer: both work. But they don’t work the same way, and knowing the difference will save you from a bad cook.


Running at 225°F

This is old-school barbecue territory. Your pork butt sits in smoke for a long time — we’re talking 12 to 16 hours depending on size — and every bit of that time shows up in the flavor. Connective tissue breaks down slowly, bark builds gradually, and the whole cook has a rhythm to it.

The catch? You’re managing that fire for a long time. Small temperature swings matter more at 225°F than they do at higher temps, so your pit needs to be dialed in.


Running at 275°F

This is where most backyard cooks land, and for good reason. The cook is shorter, the stall is less brutal, and bark firms up faster. You still get great pulled pork — you just get it a few hours earlier.

If you’re cooking for a crowd or working against a deadline, 275°F is your friend.


The Stall

That maddening plateau where your internal temp stops moving? It hits around 150°F–170°F either way. The difference is at 275°F your cooker has enough heat behind it to push through faster. At 225°F, it can feel like the meat just gave up on you.

Will Higher Heat Dry It Out?

No — if you cook it right. Dry pulled pork almost always comes from pulling too early, not from temperature. Cook until it probes tender, not just until the thermometer hits a number.

Anywhere from 250°F to 275°F is a great target for most cooks. If you’ve got the whole day and love the ritual, 225°F delivers. If you want reliable results on a schedule, push to 275°F.
